Mid-week Breakfast

While waiting at home yesterday for the glass company to come replace my windshield on my van, I decided to cook breakfast food. Recipes from the Pioneer Woman of course.

Chocolate Chunk Zucchini Bread and Best Ever Breakfast Potatoes!wp-1455852644506.jpg


The chocolate chunk zucchini bread is really chocolatey for all you chocoholics out there like me. 2 giant dark chocolate candy bars and cocoa are some of the main ingredients. Awesome!  Just a word of advice…don’t tell your kids there is zucchini in it.  My 2 teenagers never would fully commit to liking it. “Can you taste the zucchini?”  “It’s not sweet enough”.  “It kinda tastes like a brownie”.  Whatever!  Don’t listen to them. It was the best zucchini bread ever.

And as for the Potatoes, they really were the best breakfast potatoes ever. The secret is how they are cooked.  Partially baked and then broiled to make them nice and crispy.  Flavorful too!  Onions, garlic, peppers, etc.
