Isn’t this a beautiful salad? It was delicious too. After a morning of chores inside for me and outside for the boys everyone worked up an appetite. I deviated from the recipe a little. My chicken was no where to be found when it was time to cook so I improvised with some leftover chicken tenders from last night.
It all begins with lettuce. I used a whole head of Greenleaf and some leftover spinach and kale. Then it’s bacon, boiled eggs ( I only had 3. Calls for 6), avocado, chicken, tomatoes (called for cherry, I use roma), Blue cheese in the middle, I added a little ham I had leftover, then scallions sprinkled over the top. Then made from scratch blue cheese dressing. Yum! Yum! Delicious.
