Have you ever been so excited to make a new recipe for dinner and as you are pulling the ingredients out to make it, you realize that you don’t have a key ingredient? Welcome to my Monday night meal plan. I had been looking forward all day to making Cashew Chicken for dinner. I had bought all these fancy ingredients that I don’t use on a regular basis like, oyster sauce and sesame oil and rice vinegar. I was really curious how all of that would taste. Then….Bummer Dude! I forgot to buy soy sauce and water chesnuts. Where is my brain?
OK, so this blog is supposed to be about my yummy Beef and Bean Burritos. Super easy, super good! 16 minutes. The hardest part for me was waiting for the beef to thaw in the microwave since I originally had chicken ready for the cashew chicken.
So here’s how it goes…Tortilla, refried beans with melted cheese in them, meat mixture of beef, onions, cumin, chili powder, oregano, and some leftover taco seasoning. Roll up. Garnish with my fabulous, famous homemade salsa, more cheese and chopped cilantro for garnish. Accompanied by chunky Pico de gallo. You could add sour cream to the top, if you like. My 15 year old son did; but he so politely asked if I would be offended if he did. He’s such a cutie!
