Chicken Bacon Ranch Panini

Do you own a Panini maker? Well don’t fret if you dont. I don’t either but I made these deliciously easy Chicken Bacon Ranch Panini in minutes.  Beautiful sliced french bread, spicy mustard on one half, ranch dressing on the other half, homemade or bottled. Chicken that has been fried in oil for about 10 minutes, not quite crisp bacon and sharp cheddar cheese slices. Assemble and brush with butter on both sides.

Now here’s the fun part with no Panini maker. Place a heavy skillet on top of the sandwich while cooking.  I actually used an iron griddle. It worked great the first go ’round.  Unfortunately, as I was making the second sandwich for my son, the griddle stuck and my sandwich landed on the floor. Oops!  5 second rule! Right?

Served with some broccoli and chips, it was a delectable dinner. Try it you’ll like it.
