…Or more affectionately called- Boiled Cookies. That’s what I grew up hearing my mother call them. No matter what you call them they are great for 3 reasons: 1) they are delicious, 2) they are so simple to make & 3) I usually have all the ingredients on hand in the frig and pantry. I think that’s the best reason of all. They are so simple to make that your children can do it with a little supervision at the stove if they are younger.
Here’s what you do….
Combine 2 cups of sugar, 1/4 cup cocoa, 1/4 cup butter, 1/2 cup milk in a heavy saucepan; stir well. Cook over medium heat until mixture comes to a boil; boil 1 minute. Stir in 2 1/2 cups oats, 3/4 cup crunchy peanut butter, (I use creamy), and 2 teaspoons of vanilla. Drop dough by heaping teaspoonfuls onto wax paper; cool thoroughly. Note: I use a small scoop to drop them. It just makes it easier and the cookies more uniform.
These are a fast great treat when you are craving chocolate. Hope you enjoy.
