Strawberry Granola Pancakes, Chinese food and Chicken Cordon Bleu Casserole

I’ve  got a lot to catch up on…..
     1)Strawberry Granola Pancakes

I made these this past Saturday. They were great! But not my favorite pancakes ever.  I think with homemade granola like the Pioneer Woman made, they would be even better.  The toppings of strawberries, maple syrup and vanilla yogurt are what makes them so delicious.  Check out thefoodnetwork.com/pioneer woman for the recipe.

2)Beef with broccoli and endamame fried rice

Take out food with a fresher taste. Yum! Yum! I could eat the endamame fried rice till the cows come home.  The beef with broccoli was good but I am not a big fan of ginger and this dish had too much for me.

3) Chicken Cordon Bleu Casserole

Warm and cheesy. Delicious! Chicken, ham, swiss and monterey jack cheese. Panko bread crumbs on top. Comfort food.  I do think I didn’t use quite enough chicken because it was kind of soupy  but that didn’t affect the taste at all. Farely easy to make too.  A good weeknight meal paired with a salad.
